Chocolate-Filled Cupcakes

To mix this batter by hand, put ingredients into a large bowl
- 3/4 cup (1 1/2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 6 large egg whites
- 3/4 cup whole milk
- 2 teaspoons pure vanilla extract
- 2 vanilla beans, halved lengthwise, seeds scraped and reserved, beans discarded
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon coarse salt
- 4 ounces bittersweet chocolate, cut into 12 2-inch chunks
- 1 tablespoon confectioners' sugar, for dusting
Arugula Salad with Strawberries

Look for locally grown berries that are brightly colored and plump
- 1/2 pint strawberries, rinsed, hulled, and quartered
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 bunches arugula, washed, dried, and trimmed
- 1/2 cup toasted pecan halves
Peanut Butter Cup Cheesecake

Heat oven to 350°F. Grease 9-inch springform pan with butter
- Brownie Crust:
- 1 cup semi-sweet chocolate chips
- 1 cup peanut butter chips
- 6 tablespoons unsalted butter, melted
- 1-1/4 cups sugar
- 1 tablespoon vanilla extract
- 2 eggs
- 1 cup plus 2 tablespoons all-purpose flour
- 1/3 cup unsweetened cocoa
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- Cheesecake filling:
- 2 lbs cream cheese, softened
- 5 eggs, at room temperature
- 1-1/2 cups firmly packed brown sugar
- 1 cup smooth peanut butter (not natural-style)
- 1/2 cups whipping cream
- 1 tablespoon vanilla extract
- 6 peanut butter cups, cut into quarters
- Glaze Ingredients:
- 8 ounces of semi-sweet chocolate chips
- 3 Tablespoons of creamy peanut butter
- 2 Tablespoons of light corn syrup
- 1/2 cup of heavy whipping cream
- For Decoration
- 10 Peanut Butter Cups
Pepper steak

- 1 lb round steak (1/4 inch thick -pound to tenderize if desired)
- 2 T oil
- 1/4 c chopped onion
- 1 clove garlic
- 1 t salt
- 1 t pepper
- 1 beef bouillon cube
- 1 c water
- 1 (1 lb) can tomatoes
- 1 bell pepper, sliced thin
- 3 T flour
- 1/4 c cold water
- 2 T soy sauce
Pimento Cheese Grits

n a large saucepan, bring the water and milk to a boil
- 5 cups water
- 3 cups whole milk
- 1 1/2 cups medium-grind stone-ground corn grits
- Salt
- 4 ounces sharp yellow cheddar cheese, shredded (1 1/4 cups)
- 4 ounces sharp white cheddar cheese, shredded (1 1/4 cups)
- 3 ounces cream cheese, at room temperature
- 1/3 cup finely diced jarred piquillo peppers, patted dry
- 1/8 teaspoon cayenne
- Freshly ground black pepper
- Thinly sliced scallions, for garnish
Tomato Sauce

Spray a nonstick skillet with olive-oil spray, and place over low heat
- 1/2 small onion, minced
- 1 1/2 teaspoons minced garlic, (1 large clove)
- 1 35 1/2-ounce imported whole Italian tomatoes, roughly chopped
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- Olive oil, cooking spray

- 2 teaspoons rice vinegar
- 1/2 teaspoon toasted sesame oil
