Zip Lock Bag Omelets

Pat F. had a breakfast last Saturday and we did a really easy, fun thing: Made Omelets
- 1 . Prepare items you like in your omelets- cut up ham, onions, shred cheese, whatever!
- 1 . Bring a large pot of water to a boil.
- 2 . Give everyone a zip lock (small) bag. Let them take as many eggs as they want for their size of omelet. I used 2.
- 3 . Crack the eggs into the bag, and squish the eggs in the bag.
- 4 . Add ingredients you want in your omelet.
- 5 . Mark the bags, or keep track of the order you put them into the pot.
- 6 . Press out air, and seal bags. Put bags in the boiling water.
- 7 . Boil for 13 minutes.
- 8 . Take out and open bag, omelet will roll right out of the bag.

- 2 (14.5 oz) cans Chicken Broth.
- 1 (26oz or 26.5 oz) can Hunt's Chunky Vegetable Spaghetti Sauce
- 1 cup water
- 1 1/2 cups Rotini pasta
- 1 large Carrot, thinly sliced
- 1 cup sliced Yellow Squash
- Grated Parmesan Cheese

Mini Meat Loaves

In a large bowl, combine the first six ingredients
- 1 egg
- 1 cup milk
- 1 cup seasoned bread crumbs
- 1 pkg Lipton Onion Soup
- 1 tbsp Worcestershire Sauce
- 1 teaspoon salt
- 3 lbs lean ground beef (= 4 loaves)
- 3/4 cup Italian tomato sauce or pizza sauce
- Shredded Parmesan cheese, optional
Chicken Tortilla Soup

Preheat oven to 350°F. Spread tortillas in a single layer on a baking sheet
- 4 soft corn tortillas, cut into 1-by-2-inch strips
- 1 tablespoon extra-virgin olive oil
- 1 pound boneless, skinless chicken breast, trimmed of fat and diced
- 3 cups frozen bell pepper and onion mix, (about 10 ounces)
- 1 tablespoon ground cumin
- 2 14-ounce can reduced-sodium chicken broth
- 1 15-ounce can diced tomatoes, preferably with green chiles
- 1/4 teaspoon freshly ground pepper
- 2 tablespoons lime juice
- 1/2 cup chopped fresh cilantro
- 3/4 cup shredded reduced-fat Cheddar or Monterey Jack cheese
Brunswick Stew

Cook beef and pork, add chicken and cook
- 1 lb coarse Ground Round
- 1 lb coarse Ground Pork
- 1 lb cooked Chicken Breast - cubed
- 28 oz canned Tomatoes - coarsley chopped
- 16 oz Cream Corn
- 1/4 cup Ketchup
- 1 tbls Butter
- 1/4 cup Cider Vinegar
- 1 teas Salt
- 1-2 teas Pepper
- 1 tbls Sugar
- 1 teas Red Pepper
Garlic Twice Baked Potatoes

Bake the potatoes at 400° for 45-55 minutes or until tender
- 6 medium baking potatoes
- 1 whole garlic bulb
- 1 teas Light Olive Oil or Canola Oil
- 2 tablespoons butter, softened
- 1/2 cup fat-free milk
- 1/2 cup buttermilk
- 1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- Paprika
