MAke bechamel: Melt butter in a heavy saucepan over medium
- Bechamel:
- 2 tbsp butter
- 2 tbsp flour
- 1.25 cups milk, warmed
- salt and pepper
- 12 small fingerling potatoes, cooked until tender, smashed
- 2 tbsp olive oil
- 4 slices thick day old country bread
- 4 thick slices smoked ham
- 8 slices gruyere cheese
Garlic-Sesame Spinach

Mix all ingredients (not steak) in a bowl
- 1/2 red onion, minced
- 1/3 cup flat leaf parsley, chopped
- 1 tbsp oregano
- 1 tbsp minced garlic

- 3 tbsp red wine vinegar
- 1/2 tsp red pepper flakes
- salt and pepper

- 1 cup quinoa, rinsed
- 1/4 cup pine nuts
