Onion Dip Alternative

1. Mix everything and place it in a baking dish
- 1 (4 ounce) package of cream cheese (softened)
- 1/2 cup mayonnaise
- 1/2 cup parmigiano reggiano (grated)
- 1/2 cup sweet onion (chopped)
- pepper to taste
Greek Chicken - Tomato and Lemon Marinade

1. Place the wooden skewers in a tall cup or vase with cold water
- 2 pounds of chicken breasts,
- 3 tablespoons of tomato paste,
- 6 tablespoons of olive oil,
- 1 lemon,
- 3 cloves of garlic,
- 1 teaspoon of ground cumin,
- 1/2 teaspoon of ground white pepper,
- 1/2 teaspoon of ground black pepper,
- pinch of salt.
- Optional: peppers, onions, mushrooms to place on skewers
Beef Stew

- 3 Tbsp olive oil
- 2 lb cubed beef stew meat (1 1/4")
- 1 med onion, diced
- 3 cloves garlic, minced
- 12 oz beer (pale lager)
- 3 1/2 c beef broth
- 2 Tbsp tomato paste
- 1 Tbsp Worcestershire sauce
- 1 1/2 tsp sugar
- 1/2 tsp paprika
- 8 new potatoes (1 1/2"-2" diameter), quartered
- 4 carrots, sliced diagonally
- 3 Tbsp all-purpose flour
- Finely chopped fresh parsley (optional)
- Crusty bread (optional)
Caramel Apple Cheesecake Bars

Preheat oven to 350 degrees F
- Crust:
- 2 cups all-purpose flour
- 1/2 cup firmly packed brown sugar
- 1 cup (2 sticks) butter, softened
- Cheesecake Filling:
- 3 (8-ounce) packages cream cheese, softened
- 3/4 cup sugar, plus 2 tablespoons, divided
- 3 large eggs
- 1 1/2 teaspoons vanilla extract
- Apples:
- 3 Granny Smith apples, peeled, cored and finely chopped
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- Streusel Topping:
- 1 cup firmly packed brown sugar
- 1 cup all-purpose flour
- 1/2 cup quick cooking oats
- 1/2 cup (1 stick) butter, softened
Ginger and Cilantro Baked Tilapia

Heat the oven to 475ºF. Pat the fish dry and season lightly with salt and pepper
- 2 large tilapia fillets (or similar thin white fish) - about 3/4 pound
- 1 jalapeno pepper (optional)
- 3 garlic cloves
- 1 inch grated ginger (1 tablespoon)
- 2 tablespoons soy sauce
- 1/4 cup white wine
- 1 teaspoon sesame oil
- 1/3 cup chopped cilantro
- Scallions, chopped for garnish
- Extra cilantro, to garnish
Mushroom Casserole

Preheat oven to 350F degrees
- 1/2 pound (8 ounces) brown mushrooms, cleaned and chopped
- 1 large onion, well chopped
- 3 cloves garlic, finely chopped
- 3 cups cooked brown rice, room temperature
- 2 large eggs
- 1 cup cottage cheese
- 1/2 cup sour cream
- 1/2 teaspoon fine grain sea salt
- 1/3 cup freshly grated Parmesan cheese
- a bit of fresh tarragon, chopped

Instructions: QUINOA PATTIES: Combine the quinoa, eggs, and salt in a medium bowl

- 2 1/2 cups cooked quinoa, at room temperature
- 4 large eggs, beaten
- 3/4 tsp kosher salt
- 1 small yellow or white onion, finely chopped
