MOM'S CHOCOLATE TORTE

- Directions:
- 1 dark chocolate cake mix
- 2 boxes baker's sweet German chocolate (green box)
- 3/4 c. butter
- 1/2 c. pecans, chopped (may use toasted almonds)
- 12 oz. Cool Whip, divided into thirds
- ●Bake cake according to directions on box in 2 round cake pans. Split each into 2 layers with dental floss or sharp knife.
- ●Save small amount of chocolate to decorate top of cake if desired. Melt remaining chocolate over low heat in sauce pan stirring constantly.
- ●Remove from heat and cool slightly. Add butter and mix until smooth. Stir in nuts.
- Assemble cake as follows:
- ●Top first layer with 1/2 of chocolate mixture.
- ●Top next layer with 1/3 of Cool Whip.
- ●Top next layer with remaining chocolate mixture.
- ●Top last layer with 1/3 of Cool Whip using remaining 1/3 of Cool Whip to decorate cake if desired (if do not desire to decorate with Cool Whip, only need 8 oz container split into 1/2).
- ●Warm reserved chocolate in microwave for a few seconds and shave with potatoe peeler to make chocolate curls. Decorate top of cake with the curls.
CRANBERRY ORANGE BREAKFAST BREAD

- 1 1/8 cups orange juice
- 2 tablespoons vegetable oil
- 2 tablespoons honey
- 3 cups bread flour
- 1 tablespoon dry milk powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1 teaspoon salt
- 1 (.25 ounce) package active dry yeast
- 1 tablespoon grated orange zest
- 1 cup sweetened dried cranberries
- 1/3 cup chopped walnuts
- Directions
- ● Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start.
- ● If your machine has a Fruit setting, add the cranberries and nuts at the signal, or about 5 minutes before the kneading cycle has finished.
- Note: Several reviewers suggested adding more cranberries and nuts. Also, substituting some whole wheat flour for some of the bread flour.
BUTTERMILK CARAMEL FUDGE

- Directions:
- 2 c. sugar
- 3 T. white Karo syrup
- 1 c. buttermilk
- 1 t. baking soda
- 1 c. pecans, chopped
- 1 T. butter
- 1 t. vanilla
- Mix sugar, Karo, buttermilk and soda in boiler.
- Stir well; cook until forms medium-hard ball when dropped in cold water.
- Add pecans, butter and vanilla; beat until cool and creamy.
- Pour into well-greased platter.
- Cut into squares when cooled.
STRAWBERRY PIE II

- 1 regular pie crust cooked.
- 3 oz. cream cheese
- 2 T. milk
- 1 T. sugar
- 2 pts. fresh strawberries, divided
- ½ C. sugar
- 3 T. cornstarch
- ●Cream the cream cheese and add milk and 1 T. sugar. Spread on crust.
- ●Put 1 pt. fresh strawberries on top of cream cheese mixture.
- ●Mix ½ C. sugar, 1 pt. strawberries, and ½ C. water. Bring to a boil. Mash the strawberries with a potato masher and add cornstarch. Cook until clear and pour over strawberries and cream cheese layers.

- 30 to in cool water. Afterwards, soak in clean, cool water for about 30 minutes prior to cooking.
- 1 2 to to large pan and cover completely with water. Start with 1 T. salt for each 2 c. peanuts. (More salt may be added later to taste.) When fully cooked, the texture of the peanut should be similar to that of a cooked dry bean or pea.
- 40 20 to 15 minutes, then taste. Add more salt if needed. Continue cooking and taste again in 20 minutes to see if fully cooked. If not ready, continue tasting every 15 minutes until they are ready.
CHICKEN CASSEROLE II

- 4-6 lbs chicken, cut into small pieces
- 1 stick butter or oleo
- 1 c. chopped onion
- 1 c. chopped celery
- 1 can mushroom soup
- 1 jar chopped pimentos
- 1/2 lb cheddar or Velveeta cheese, grated
- 1 c. chicken broth
- 1 can water chestnuts, chopped
- 12 oz noodles or elbow spaghetti
- ●4 to 6 lb. hen or two large fryers oiled and cut up in small pieces.
- ●Saute in 1 stick of butter or oleo, 1 cup chopped onion, 1 cup of chopped celery. Add 1 can mushroom soup, 1 jar chopped pimentos, ½ lb. grated cheddar or Velveeta cheese. ( I use Velveeta), 1 cup hot chicken broth, and 1 can chopped water chestnuts.
- ●Add 12 oz. cooked green or white noodles. (I cook my noodles, or elbow spaghetti which I sometimes use, in the chicken broth. I also season hen or chickens while cooking.)
- ●Mix all ingredients together, including cut up chicken. Be sure to add enough broth to make it juicy but not soupy.
- ●Pour into two casserole dishes and bake at 350 F. until mixture begins to bubble and is hot all through.
SOFT OATMEAL COOKIES

- 1 cup butter, softened
- 1 cup white sugar
- 1 cup packed brown sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 teaspoons ground cinnamon
- 3 cups quick cooking oats
- Directions
- ●In a medium bowl, cream together butter, white sugar, and brown sugar. Beat in eggs one at a time, then stir in vanilla.
- ●Combine flour, baking soda, salt, and cinnamon; stir into the creamed mixture. Mix in oats. Cover, and chill dough for at least one hour.
- ●Preheat the oven to 375 degrees F. ●Grease cookie sheets.
- ●Roll the dough into walnut sized balls, and place 2 inches apart on cookie sheets. Flatten each cookie with a large fork dipped in sugar.
- ●Bake for 8 to 10 minutes in preheated oven. Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
SUGAR COOKIES II

●Store in covered container
- 2 C. sugar
- 1 C. butter (no substitute)
- 3 eggs
- 1 C. flour
- 1/4 tea. soda, dissolved in water
- 3 T. hot water
- ●Cream butter and sugar together until light and fluffy.
- ●Beat eggs and add to sugar mixture.
- ●Add flour and soda that has been dissolved in hot water.
- ●Add enough flour to handle dough and allow to roll out. (Not a flake more than is necessary)
- ●Cut in rather large rounds, about 3 in. in diameter.
- ●Place on a buttered cooky sheet and bake in hot oven (425-450 F.) about 12 min. or until golden brown.
STEAK HOUSE BLACK BREAD

- Directions:
- 1 1/3 cups strong brewed coffee, room temperature
- 1/4 cup vegetable oil
- 1/4 cup dark molasses
- 2 tablespoons brown sugar
- 1 cup whole wheat flour
- 1 cup rye flour
- 2 cups bread flour
- 2 tablespoons unsweetened cocoa powder
- 1 1/2 teaspoons salt
- 2 1/2 teaspoons active dry yeast or bread machine yeast
- ●Place all ingredients in bread machine pan in order suggested by manufacturer. Select Dough cycle. When the machine indicates the end of the final rise, remove the dough.
- ●Preheat the oven to 375 degrees F (190 degrees C). Shape the dough into 12 dinner rolls, or one 9x5 inch loaf.
- ●Let rise until doubled in size while the oven preheats, they should rise quickly.
- B●ake for 20 minutes in the preheated oven for rolls, or 35 minutes for a loaf, or until the loaf sounds hollow when tapped on the bottom.
