Panzanella Salad

1. Heat oven to 400 degrees F
- 12 ounce baguette
- 1/4 cup white wine vinegar
- 2 teaspoons Dijon or spicy brown mustard
- 1/2 teaspoon sugar
- 1/8 teaspoon salt
- 1/8 teaspoon pepper
- 1/4 cup olive oil
- 6 cups packed mixed baby greens
- 4 ounces cubed tomato-basil cheddar
- 8 ounces mixed heirloom tomatoes, sliced
Vegan Chocolate Cake & Icing

Prepare cake and cool. Remove cooled cake from pan

- 1 cup Chocolate Avocado Icing (recipe follows)
- As needed, edible flowers or sliced fresh berries and mint for optional garnish
- Vegan Chocolate Cake - Yield: 1 (8") cake
- 1 1/2 cups cake flour
- 3/4 cup white granulated sugar
- 1/4 cup brown sugar
- 1/4 cup dark unsweetened cocoa powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. espresso powder
- 1/3 cup vegetable oil
- 1 tsp. vanilla extract
- 1 tsp. apple cider vinegar
- 1 cup unsweetened almond milk
- As needed, nonstick baking spray
- 2 ripe, Fresh Hass Avocados, peeled and seeded, diced
- 1/2 cup dark unsweetened cocoa powder
- 1 1/2 Tbsp. powdered sugar
- 1/2 cup agave syrup
- 1/2 tsp. vanilla extract

First cook the rice. Then in a large casserole dish combine the rice, beef broth and vegetables

- 2 cups of mixed vegetables (sweet potato, carrots, beans etc..)
- 1 cup of beef broth
- 3 free range eggs
- 1/2 cup low fat milk
- 1 cup low fat natural yogurt
- 1/2 cup water with 1 beef stock cube dissolved in it.

- 1-14 oz can Chopped peeled tomatoes, w/liquid
