Curry Shrimp with Vegetable Noodles

Heat large pan over medium heat
- 1 minced shallot
- 3 cloves minced garlic
- 1 red bell pepper, chopped
- 2 yellow squash, spiraled
- 2 zucchini squash, spiraled
- 4 TBSP red curry paste
- 2 tsp honey
- 1 TBSP soy sauce
- 1/2 cup coconut milk
- 1 tsp paprika
- 2 scallions, chopped
- handful of cilantro, chopped
- 3 large basil leaves, chopped
- 1 pound shrimp, cleaned
- 2 TBSP olive oil
- Juice of one lime
- Zest of one lime
- Salt
- Red pepper flakes, optional

- 2 pounds dried navy beans' soaked overnight in cold water and drained
- 1 onion, coarsely chopped
- 1 garlic clove, minced
- 3/4 cup light molasses or sorghum syrup
- 3/4 cup light brown sugar
- 1 tablespoon soy sauce
- 1-1/2 teaspoons salt
- 1 teaspoon Worcestershire sauc
- 1/4 teaspoon dry mustard
