Basil & Tomato Feta Bruschetta
This bruschetta recipes uses tomato, basil, and feta for an added Mediterranean flair. Serve as an appetizer or as a side with dinner.

Ingredients
- 1 loaf French bread, cut into 36 slices
- 2 tablespoons oil
- 1 pound plum tomatoes, chopped (about 2-1/2 cups)
- 1 (4-ounce) package Athenos crumbled feta cheese with basil & tomato, finely chopped
- 1/2 cup finely chopped red onions
- 3 tablespoons chopped fresh parsley
- 1 tablespoon chopped pitted ripe olives
- 1/4 teaspoon pepper
Preparation
Step 1
Preheat broiler. Place bread in an even layer on baking sheet. Broil 2 to 3 minutes on each side or until lightly toasted on both sides. Brush 1 side of each toast slice with 1 tablespoon oil.
Meanwhile, mix tomatoes, 1 tablespoon remaining oil, feta cheese, onions, parsley, olives, and pepper.
Spoon about 2 teaspoons of the tomato mixture onto each toast slice just before serving.
