Ingredients
- 9-inch baked pie shell
- 3-ounce package cream cheese, softened
- milk
- 3 pints strawberries
- water
- 1 cup sugar
- 3 tablespoons cornstarch
- Whipped cream
Preparation
Step 1
Mix enough milk with soft cream cheese to spread into bottom of pie shell. Set aside.
Wash, stem and dry strawberries and arrange 2 pints of berries in pie shell.
Mash remaining berries and add water to make 2 cups. I usually do this in the blender.
In a small bowl, mix together sugar and cornstarch, set aside. Bring juice to boil and gradually stir in sugar/cornstarch mixture and bring back to a boil. Cook 1 minute more.
Cool and pour over berries in pie shell.
Serve cold with whipped cream.
