Greek Quinoa Salad

Ingredients
- Dressing:
- 2 cups chicken stock
- 1 cup quinoa
- 1/2 cup red pepper diced
- 1/2 cup green pepper diced
- 1/2 cup cucumber diced
- 1/4 cup green onion diced
- 1/2 cup firm tomato diced
- 1/4 cup black olives sliced
- 1/4 cup red onion
- 3 oz feta cheese
- 1/4 cup lemon juice
- 2 tbsp. olive oil
- 1 tsp minced garlic
- 1/2 tsp basil
- 1/2 tsp oregano
- pepper
Preparation
Step 1
In saucepan bring stock to a boil, rinse quinoa in cold water, then add to chicken broth. Cover. Reduce heat to simmer. Cook 15 minutes, until liquid is absorbed.
Transfer to a large bowl and cool.
Stir veggies into cooled quinoa.
Whisk together dressing and pour over salad.
