No-Bake Chewy Chocolate Bars

Ingredients

  • 1 cup of GF Oats
  • 1/2 cup of Enjoy Life Seed & Fruit Mountain Mambo Mix
  • 2 Enjoy Life Boom Choco Boom Ricemilk Crunch Bars
  • 1/8 cup of non-dairy butter or coconut oil
  • 1/4 cup of honey or maple syrup
  • 1/4 cup of SunButter or preferred nut butter spread

Preparation

Step 1

First, line an 8x8 pan or baking dish with wax or parchment paper and set aside.
Smash (or chop, but smashing is fun!) the Enjoy Life Boom Choco Boom bars into pieces, like a mosaic.
In a large bowl, toss together the chocolate bar pieces, oats, and Seed & Fruit mix.
On your stove top, in a small sauce pan, bring the non-dairy butter & honey to a boil for 3-4 minutes. Remove from heat.
Add SunButter to the sauce pan and stir together.
Pour over the dry ingredients in the large bowl.
Stir together. This will melt the chocolate.
Pour the mixture into your lined baking dish and press down firmly. You can use wax paper to keep it from sticking.
Important - Make sure you press them down as firmly as possible so they'll hold together!
Chill for at least 2 hours in the refrigerator.
Cut into bars or squares and enjoy!
