Ham and cheese frittata

Ingredients

  • 1 C diced cooked ham (I used canned or left over)
  • 1/2 C chopped bell peppers (red or green)
  • 1 C fresh sliced mushrooms or 1 small can mushrooms drained
  • 1/2 C onion chopped
  • 6 eggs - slightly beaten
  • 3/4 C cottage cheese
  • 1/4 t black pepper
  • 1-2 chopped green onions
  • 2 plum tomatoes - sliced
  • 1/4 C shredded cheddar cheese

Preparation

Step 1

In large skillet sauté ham, mushrooms, peppers, and onion until ham is slightly browned and vegetables are soft.

in a bowl combine beaten eggs, cottage cheese, and black pepper. Pour this mixture over the ham and vegetable mixture.

As it is cooking lift the edges of the setting egg allowing the unset potion to run underneath to become set.

Once the eggs are almost set, place the skillet under the broiler for about a minute to complete setting the eggs. Then top the mixture with the tomatoes, green onions, and cheese. Broil 1 minute or so just enough to melt the cheese.
