Smoky Potato Pancakes

Ingredients

  • 2 center cut bacon slices
  • 2 cups chopped onion
  • 1 cup thinly sliced leek
  • 3 garlic cloves, chopped
  • 1 1/2 pounds shredded peeled baking potato (2)
  • 1/3 cup shredded sharp cheddar
  • salt, pepper
  • 2 large eggs
  • cooking spray
  • 1/3 cup reduced fat sour cream

Preparation

Step 1

preheat oven to 425
cook bacon in large skillet over med heat til crisp. remove and crumble.

add onion to pan, cook 5 mins, add leek and garlic, cook 2 mins.

combine onion mix, potato, cheddar cheese, salt and pepper and 2 large eggs in bowl.

divide mix into 8 portions, shape into patty, coat with cooking spray.

bake at 425 for 25 mins. top with crumbled bacon and sour cream
