Thai Red-Curry Tilapia

  • 1/2 cup panko crumbs
  • 2 tbsp. thai red-curry paste
  • 1 tbsp. lime juice
  • 2 tilapia fillets
  • olive oil

Preparation

Step 1

Preheat oven to 400 F. Lightly spray a baking sheet with oil. Spread crumbs in a shallow dish. In another shallow dish, stir paste with juice. Cut tilapia into quarters, forming 8 fish-stick sized pieces. Rub curry all over fillets, then coat with panko. Place fish on prepared sheet. Lightly spray fish with oil. Bake in the top third of oven until a knife tip inserted into thickest part of fish and held for 10 sec. comes out warm, 8-10 mins.
