Ingredients
- 3 c diced and seeded watermelon
- 1 c diced seedless cucumber
- 1 c chopped romaine lettuce
- 1/2 t white balsamic vinegar
- Crumbled goat cheese
- Chopped basil
Preparation
Step 1
Make gazpacho by combining watermelon thru vinegar along with salt and pepper to taste in a blender. Puree until smooth and divide evenly among four bowls. Garnish with crumbled goat cheese and 1 t chopped basil.
