Mango Sorbet

Ingredients

  • 1 cup sugar
  • 1 lb apricots plus more for serving
  • 3/4 cup sparkling wine

Preparation

Step 1

Bring apricots, wine, sugar, and 2 cups water to boil - reduce heat and simmer stirring often about 10-15 minutes until apricots are very tender.

Let cool completely

Transfer mixture to blender and purée until smooth - add water to mixture so it measures 4 cups

Transfer to large shallow baking dish and freeze at least 4-5 hours.
