Cherry Pudding

Ingredients

  • 2 Tblsp. butter
  • 1/2 tsp. salt
  • 2 eggs
  • 1 can sour cherries
  • 2 cups flour; sifted
  • 1 cup boiling water
  • 2 tsp. baking powder
  • 1 cup sugar

Preparation

Step 1

Preheat oven to 375 degrees
Grease 9x9x2" glass baking dish

Sift flour and baking soda together in small bowl.
Mix butter and sugar together. Add eggs one at a time beating after each addition.
Alternate flour and milk with butter mixture. Mix well until all incorporated.
Drain cherries; add juices with boiling water; bring to re-boil. Sprinkle cherries over batter. Sprinkle with 1 cup sugar over batter. Pour boiling liquid over cherries. Bake for 45 minutes. Serve warm with ice cream.
