Ingredients
- 1 C Peach Sake
- 2 C Peach sparkling wine
- 1 C sugar
- 2 White peaches
- 1 sheet puff pastry
- 1 good double cream brie
- Toast points
Preparation
Step 1
Cut the peaches in half, remove and discard the stones and then cut the peaches in quarters. Add the peaches to a sauce pan with the sake, wine and half the sugar. Bring the liquid to a simmer and simmer until the peaches are soft, but not mushy. Remove the peaches to a plate to cool and then add the rest of the sugar and reduce the sauce to a thick syrup, about 1/2 of a cup is all that will be remaining.
Meanwhile roll out one sheet of puff pastry and place the brie in it, wrap the puff pastry around the brie and make a packet, bake at 350 for 25 minutes or until the puff pastry is golden brown.
Remove the puff pastry and place on a serving platter. Slice the peaches into 1/4 inch thick slices and display in a pinwheel ontop of the puff pastry. It should look like a peach tart when done. Pour the warm syrup over the Brie and serve with toast points.
