Ingredients

  • For cookies:
  • 1 1/4 cups flour
  • 1/2 cup cornstarch
  • 1/3 cup icing sugar
  • 3/4 cup butter, softened
  • 1 teaspoon grated lemon zest
  • 1 tablespoon lemon juice
  • For frosting:
  • 3/4 cup icing sugar
  • 1/4 cup butter, softened
  • 1 teaspoon grated lemon zest
  • 1 teaspoon lemon juice

Preparation

Step 1

In large mixer bowl combine first 6 ingredients. Beat at low speed scraping bowl often, until well mixed, 2-3 minutes. Divide dough in half. Shape each half into 8"x1" roll. Wrap each in plastic wrap. Refrigerate until firm, about 1-2 hours. Preheat oven to 350F. With sharp knife cut each half into 1/4" slices. Place 2" apart on cookie sheets. Bake for 8-12 minutes or until set. Cookies will not brown. Cool completely. In small mixer bowl combine ingredients for frosting. Beat at medium speed, scraping bowl often, until fluffy, about 1-2 minutes. Frost cool cookies.
