Ingredients
- 1 pound cheese tortellini, fresh
- 1 /4cup extra virgin olive oil
- 2 tablespoons balsamic vinegar
- 1 /2teaspoon kosher salt
- Freshly ground black pepper
- 4 slices prosciutto, chopped
- 1 /2cup baby spinach
- 1 /2cup sun-dried tomato, chopped
- 1 /4cup Parmesan cheese, shredded

Preparation
Step 1
In a large pot of salted boiling water, cook tortellini according to package directions. Drain and transfer to large serving bowl.
Make dressing. Whisk together olive oil, balsamic vinegar, salt, and pepper.
In the large serving bowl, add prosciutto, spinach, sun dried tomatoes, and dressing and toss until well combined.
Finish by sprinkling the Parmesan cheese on top.
