Baked Apricot Chicken
Mom's easy recipe from Jane Huber...delicious!
- 6 chicken breasts or thighs....skinless
- Approx. 10 oz jar apricot preserves
- 1 pkg onion soup mix
- 1 bottle French dressing (most recipes call for Russian dressing, but I've only had it with French)
Mix preserves, soup mix and dressing in a bowl. Spread over chicken in 9x13 pan.
Cook at 350 for one hour. Keep it covered so it doesn't dry out.
Really good served with/over rice.
