BLACK BEAN AND CORN CHILI

Ingredients

  • 1 T. vegetable oil
  • 1 lb.boneless skinless chicken breast cut in 1 " pieces
  • 1 medium onion, chopped
  • 1 medium green pepper, chopped
  • 4 t. chili powder
  • 2 t. Cumin, ground
  • 1 t. Garlic powder
  • 1/2 C. Dry red wine
  • 1 can (15 oz) black beans, drained and rinsed.
  • 1 can (14 1/2 ounces) diced tomatoes , undrained
  • 1 can (15 onces) great northern beans, undrained
  • 1 can (8 3/4) whole kernel corn, drained
  • 1/2 t. salt

Preparation

Step 1

1. Heat oilk in large skillet aon medium-high heat. Add pepper and onion; cook and stir 7 to 8 minutes or
browned.

2. Heat small nonstick skillet on medium heat 2 mir powder, cumin and garlic; toast 30 seconds oruntil stirring constantly. Add chicken mixture.

3. Stir in remaining ingredients. Bring to boil. Reduce heat and simmer 20 minutes.
