Ingredients
- 2 tsp. Italian Flat Leaf Parsley, finely chopped
- 2 tsp. Roughly Grated Parmesan Cheese
- 1/4 tsp. Grated Lemon Rind
- 350 g Asparagus, trimmed
- 1/3 C. Onion, thinly sliced, or
- 2 Lg. Shallots, cut into thin wedges
- 1 Tbsp. Butter
Preparation
Step 1
Preheat oven to 425. Combine parsley, cheese & lemon peel in sm. bowl; set aside. Toss asparagus, shallots & butter in 13" x 9" roasting pan. Roast 15 min. or till tender. Arrange asparagus mixture on serving platter, then top with cheese mixture. Season with freshly ground black pepper.
