Ingredients
- 1/2 cup mayonnaise
- 3 tablespoons sour cream
- 1 tablespoon fresh lemon juice
- 1 teaspoon grated lemon rind
- 1/2 packet sugar substitute
- 1 medium jicama - (abt 6 oz) peeled, and cut into matchstick sized pieces
- 10 ounces smoked turkey breast in one piece cut into cubes
- 3 celery stalks thinly sliced
- 8 Romaine lettuce leaves
- 1/4 cup coarsely-chopped walnuts
Preparation
Step 1
In a large bowl, mix mayonnaise, sour cream, lemon juice, lemon rind, and sugar substitute until smooth.
Mix in jicama, turkey cubes, and celery. Toss gently to coat with dressing. Arrange lettuce leaves on 4 plates. Divide salad over lettuce; sprinkle with walnuts.
