Ingredients
- 2 cups dried split peas
- 1 1/2 tsp. salt
- 1 1/2 quart water
- 1 tsp. crushed basil
- 1 ham bone (about 1 1/2 pounds)
- 1/4 cup butter
- 1 onion, sliced
- 1/4 cup flour
- 1 cup grated carrots
- 2 cup milk

Preparation
Step 1
In a large saucepan, combine peas, water, bone, onion, celery, carrots, salt, and basil. Bring to a boil, reduce heat and simmer for 1 ½ to 2 hours. Stir flour into melted butter in a separate saucepan. Cook until bubbly. Gradually add milk, stirring constantly. Bring to a boil, cook for 1 minute and then stir the white sauce into the soup.
*Note:* Do not add the white sauce if you plan to freeze the soup. This can be made and added when you reheat the soup. Also, may substitute a heavy cream for the cream sauce, the amount will depend on your taste.
