Roasted Garlic Pasta Primavera

Ingredients

  • Garlic Sauce:
  • 1 Tbs. olive oil
  • 1 1/2 whole roasted garlic (OR slices roasted 15-20 minutes at 350 degrees)
  • 1 c. sliced mushrooms
  • 1 c. sliced tomatoes
  • 1/2 c. sliced black olives
  • 1/2 c. chopped artichoke hearts
  • 3 c. cooked pasta
  • 2 c. fresh spinach (optional)
  • 1/2 c. Parmesan
  • Salt and pepper to taste
  • 2 chopped shallots
  • 3 minced cloves of garlic
  • 1 Tbs. olive oil
  • 1 c. white wine
  • 1 1/2 c. cream

Preparation

Step 1

Saute garlic in olive oil. Add the veggies. Toss with pasta and sauce.

Sauce:
Saute shallots and garlic in olive oil. Add wine. Bring to boil and reduce by half. Add 1 1/2 c. cream and reduce by 1/2.
