Corn and Tomato Gratin

Ingredients

  • 1 1/2 lb. tomatoes, 1/2" slices
  • 2 tsp. salt
  • 1 tsp. pepper
  • 4 c. corn (6-8 ears)
  • 1 c. whole milk
  • 1/2 c. cream
  • 2 c. fresh breadcrumbs
  • 1/2 c. chopped basil
  • 1/2 c. Parmesan
  • 6 Tbs. butter

Preparation

Step 1

Sprinkle tomato slices with 1 tsp. salt and 1/2 tsp. pepper. Let drain 30 minutes.

Bring corn, milk, cream, and 1/4 tsp. salt to simmer. Cook until tender: 3-5 minutes. Cool slightly. Butter a shallow 2-qt. baking dish.

Toss together crumbs, basil, cheese, and 3/4 tsp. salt and 1/2 tsp. pepper.

Layer: 1/3 tomatoes, 1/3 bread crumbs, 1/3 butter. Add 1/2 corn. Repeat. Arrange remaining tomatoes, then bread crumbs, then butter.

Bake 40-45 minutes at 375 degrees. Cool for around 15 minutes before serving.
