Papaya Salsa

Ingredients

  • 1/2 cup celery -- diced
  • 1/2 cup green onion -- chopped
  • 1/2 cup red pepper -- diced
  • 1/2 cup pineapple, fresh or canned -- chopped
  • 1/2 cup papaya -- chopped
  • 3 tablespoons parsley -- chopped
  • 1/4 cup sliced almonds -- toasted

Preparation

Step 1

Combine first 5 ingredients and refrigerate for at least an hour. Add
parsley and combine. Can be served chilled or at room temperature.
Sprinkle almonds on top before serving.

NOTES : This is delicious served with grilled or poached salmon.
