Ingredients

  • ½

    cup celery -- diced

  • ½

    cup green onion -- chopped

  • ½

    cup red pepper -- diced

  • ½

    cup pineapple, fresh or canned -- chopped

  • ½

    cup papaya -- chopped

  • 3

    tablespoons parsley -- chopped

  • ¼

    cup sliced almonds -- toasted

Directions

Combine first 5 ingredients and refrigerate for at least an hour. Add parsley and combine. Can be served chilled or at room temperature. Sprinkle almonds on top before serving. NOTES : This is delicious served with grilled or poached salmon.
