EVERYTHING - CHEDDAR CORN BREAD OR MUFFINS 0 Picture

Ingredients

  • 2 1/2 C flour
  • 1 1/2 c corn meal
  • 1 TBS everything spice blend
  • 1 TBS sugar
  • 4 t baking powder
  • 1 t Kosher salt
  • 2 1/4 C buttermilk
  • 1/2 butter, melted
  • 2 eggs, beaten
  • 2 cups shredded cheddar cheese

Preparation

Step 1

1. Oven 400 degrees, grease 13x9 pan or use liners in 24 muffin tins
2. In large mixing bowl combine all dry ingredients
3. Add wet ingredients and stir until barely combined. Fold in cheddar cheese, batter may be lumpy
Use 2 spoons or an ice cream scoop to distribute the batter evenly into the muffin tins.
• Bake until golden brown and a toothpick inserted into the center of a muffin comes out clean, 15 to 20 minutes.
• Serve immediately or store for several days in an airtight container.
