Easy Quiche Crust and Custard

This is a really easy quiche crust and custard that can be used for any quiche you can dream of. My friend first gave me this recipe a number of years ago and I lost it but I found an identical recipe on line. The crust should be gooey to spread so you may have to adjust the water and flour for the correct consistency.

Ingredients

  • CRUST
  • 1 cup flour
  • 1/2 tsp salt
  • 1/4 cup olive oil (EVOO or oil of choice)
  • 1/4 cup COLD water (or more depending on desired consistency)
  • CUSTARD
  • 4 eggs
  • 1 can carnation milk or 1 1/2 cups heavy cream
  • 1 TBSP flour
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 1 1/2 cups shredded cheese (swiss, cheddar, mozzarella - depending on fillings)
  • FILLINGS
  • Examples - broccoli, spinach, asparagus etc. etc. etc.

Step 1

1. Preheat oven to 375 degrees

2. In a bowl mix together the flour and salt

3. In a separate bowl using a fork or whisk beat the oil and water together to thicken.

4. Pout the liquid mixture int the flour and mix well.

5. Press into a 9" quiche or pie pan

6. With a whisk mix all custard ingredients together.

7. Place any fillings you wish on the pressed pie crust and pour the custard mixture over the crust and fillings.

8. Bake at 375 until done - approximately 35 minutes - the custard should be not fully set but a knife inserted into the custard should come out clean. Let sit about 10 minutes before serving so the custard sets.
