Ingredients
- 1/8 tsp black pepper
- 1 1/2 tbsp unsalted butter
- 1 cup baby spinach
- 1/4 cup dry white wine
- 1/2 tsp dried thyme leaves
- 1/4 cup white canned beans
- 1/2 cup vegetable broth
- 3 cloves raw minced garlic
- 1 cup white onions, chopped
- 1 1/2 chicken breast fillets, boneless and skinless (4 oz)

Preparation
Step 1
Season chicken with thyme and pepper
Melt 1 tbsp butter in 12 inch nonstick skillet over medium high heat and brown chicken, turning once, 6 minutes.
Remove chicken from skillet and set aside.
Add remaining butter - 1/2 tbsp in same skillet and cook onion, stirring occasionally, 6 minutes or until tender.
Add garlic and cook 30 seconds
Add broth and wine and bring to a boil over high heat.
Reduce heat to low and return chicken to skillet
Simmer covered 5 minutes
Stir in beans and spinach
Simmer uncovered, stirring occasionally, 5 minutes or until chicken is thoroughly cooked.
