Sweet Potato & Carrot Gnocchi

Ingredients

  • 3/4 pound of Sweet potatoes, baked, peeled
  • 3 Young tender carrots, steamed
  • 1/4 cup of Low-fat yogurt
  • 7 tablespoons of Or 8 all-purpose flour
  • 1 dash of Of pepper
  • 1/8 teaspoon of Ground cumin
  • 3 Egg whites
  • 4 tablespoons of Grated Parmesan cheese
  • 1 cup of Chicken Stock
  • Parsley, chopped, for garnish

Preparation

Step 1

1. Add potatoes and carrots to a food processor fitted with the metal blade. Process until pureed. Add yogurt and flour to processor. Process to combine. Add pepper, nutmeg, cumin, egg whites and cheese; process to combine.

2. Wet your hands and shape small amounts of mixture into miniature egg shapes.

3. Drop in boiling water. When pieces come to top, boil 3 to 4 minutes.

4. Heat stock; pour over gnocchi, sprinkle with parsley.
