Ingredients
- 1 box lemon poppy seed quick bread mix
- 3/4 c buttermilk
- 2 large eggs
- 1/2 c lemon curd
- 1 box (10 0z) frozen strawberries in syrup pureed
Preparation
Step 1
Heat oven to 375. Coat 9 inch round cake pan with spray.
Put mix in bowl, stir in buttermilk and eggs just until moist. Spread in pan
Bake 25-30 min. Cool in pan 5 min. Invert on rack to cool.
Using a serrated knife cut cake in half. Place bottom half on plate and top with lemon curd. Top with remaining cake. Serve with pureed strawberries and whip cream.
