Ingredients
- 4 lbs tomatoes
- 6 cups water
Preparation
Step 1
Place tomatoes and water in a pot. Cover and bring to a boil on high heat. Immediately reduce to low and simmer one hour. Remove from heat and allow to cool. Place a fine mesh sieve over a large pot. Using a large ladle, carefully transfer the tomato mixture to the sieve. Press tomatoes to remove as much liquid as possible. Discard tomato skins. Can be refrigerated up to 1 week or frozen up to 1 month.
