- 1 zucchini, sliced thin
- 1 yellow squash, sliced thin
- shallots, minced
- mixed herbs, chopped
- lemon juice
- olive oil
- salt
- pepper
- pecorino
- pistachios
Preparation
Step 1
Thinly slice the squash and zucchini with a mandoline. Arrange a few slices on a platter in a single layer. Sprinkle with shallots and herbs, drizzle with lemon juice and olive oil. Season with salt and pepper. Can sprinkle with pistachios on the top.
