Ingredients

  • frosting:
  • 1 box vanilla cake mix, white or yellow
  • 1 3.4oz box instant pistachio pudding
  • 3 eggs
  • 1 cup oil
  • 1 cup milk
  • green food coloring (optional)
  • 1 3.4oz box instant pistachio pudding
  • 1/2 C milk
  • 1 8oz tub Cool Whip, thawed

Preparation

Step 1

1. Preheat oven to 350F.
2. Spray a 9x13" baking dish with nonstick spray
3. In a medium bowl, combine dry cake mix with dry instant pistachio pudding. Mix to combine.
4. Add eggs, oil, milk, and stir until just combined.
5. Stir in about 6-8 drops of green food coloring until fully incorporated. Pour into prepared dish.
6. Bake for 25-30 minutes, until a toothpick inserted comes out clean. Allow to cool completely before frosting.
7. To make frosting, combine instant pistachio pudding mix in a mixing bowl with milk. Stir to combine, then stir in Cool Whip. Add food coloring if desired. Spread over cooled cake, and garnish with chopped pistachios.
