PINEAPPLE UPSIDE DOWN CAKE

Ingredients

  • TOPPING:
  • 1/2 cup butter
  • 1 small can grated pineapple drained (save juice)
  • 1 cup brown sugar
  • CAKE:
  • 1 cup sugar
  • 5 Tblsp. pineapple juice
  • 1 tsp. baking powder
  • 4 eggs
  • 1 cup flour
  • 1 pinch of salt

Preparation

Step 1

TOPPING:

Melt butter.
Add brown sugar and drained pineapple
Put in 10 inch pan.

CAKE:

Beat eggs until light.
Add sugar and juice.
Add flour, baking powder and salt.
Pour over topping.
Bake at 300 for about 50 minutes.
