Ingredients
- 2 Very Ripe Bananas, mashed (about 1 cup)
- 1 tsp. Cinnamon
- 1/2 cup Water
- 1 1/2 Cup packed Brown Sugar
- 1/2 Cup Canola Oil
- 2 Large Eggs (lightly beaten)
- 1 3/4 cup All-Purpose Flour
- 1 tsp Baking Soda
- 3/4 tsp Salt
Preparation
Step 1
Preheat oven to 350°. Put rack in middle of oven. Spray one 9” disposable loaf pan with butter spray.
In a large bowl, to mashed bananas, whisk in cinnamon, water, then brown sugar, then oil, then eggs until smooth.
In a separate bowl, whisk together remaining dry ingredients, the fold into the banana mixture until just combined. Scrape batter into prepared loaf pan. Bake until firm and golden brown, about 60-70 minutes.
Let bread stand for a few minutes then turn onto a wire rack and cook to room temp.
To make two, just double recipe. It comes great.
