Mozzarella/Tomato Pasta

Ingredients

  • 1/2 cup grape tomatoes cleaned and sliced in half
  • 1/2 lb fresh mozzarella (diced or balled)
  • 1 box pasta (your choice)
  • 1/3 cup fresh basil & parsley
  • 1/3 cup crushed red pepper
  • Black pepper
  • Sea salt
  • 1/2 cup olive oil

Preparation

Step 1


Place all fresh ingredients – herbs, seasoning, oil, cheese and tomatoes in a large bowl and stir so seasoning covers cheese and tomatoes.
Cook pasta, drain pasta and pour hot pasta over the fresh ingredients.
Season with a bit more pepper, salt and oil. Stir and serve asap.
I like to serve it cold. So I drain the pasta under cold water, then mix in with the rest of the ingredients and keep in the fridge for about 2hrs.
