Fig Crusted Port Tenderloin

Ingredients

  • 1.5 pound Pork Tenderloin
  • 1 cup Fig Jam
  • 1/2 cup Balsamic Vinaigrette
  • Salt and Pepper

Preparation

Step 1

PreHeat - 350°

Roll tenderloin in balsamic vinaigrette, then brush with 1 cup fig jam, and sprinkle with salt and pepper.

Roast in a 350º oven for 28-30 minutes or internal temperature reaches 160º F.

Brush again with Fig Balsamic mixture from pan and allow to rest for 5 minutes before slicing.
