Papa Choy's Tomato Beef
from Sam Choy's Island Flavors
Sam says:When I was a kid and came home from school, my dad would go to the refrigerator and take out a bunch of vegetables. He'd wash, chop, and slice them, lay them out in a pan, then take some beef, slice it thin, and marinate it. After a quick stir-fry, this delicious dish was ready to eat. It's just amazing how quick he could do it, and how good it tasted. Dad finally taught me how to make his famous Tomato Beef when I was fourteen. It's great over steamed rice.
