- 3/4 cup butter
- 7/8 cup packed light brown sugar
- 1 teaspoon lemon zest

- 1 2/3 cups cooked pinto beans (or 1 can)
- 1 medium avocado, diced
- 1 large tomato, chopped
- 1 cup cooked wheat berries
- 1/4 cup chopped red onion
- 1 jalapeno, seeded and minced
- 1/4 cup cilantro, chopped
- juice of 2 limes
- 1 tsp olive oil
- 1 tsp balsamic vinegar
- 1 tsp cumin
- salt and pepper to taste
