Double Chocolate Almond Cookies

Preheat the oven to 350 degrees F
- 2 1/3 cups all-purpose flour
- 3/4 cup Dutch-processed cocoa powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 1/4 cups (2 1/2 sticks) salted butter, softened to room temperature
- 1 cup sugar
- 1 cup firmly packed dark or light brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1 cup white chocolate chips
- 1 1/2 cups semisweet chocolate chips
- 1 cup almonds, chopped
Salmon, Roasted w/Leeks and Shiitake

Position a rack in the center of the oven and heat the oven to 450°F
- 1/2 lb. shiitake mushrooms, stemmed and sliced 1/4 inch thick

Crab Cakes

- 2 slices firm white sandwich bread
- 1/2 pound jumbo lump crabmeat, picked over
- 2 tablespoon mayonnaise
- 1/2 teaspoon Worcestershire sauce

Cupcakes, Chocolate Stout

- 3/4 cup unsweetened cocoa, plus more for dusting finished cupcakes
- 2 cups sugar
- 2 cups all-purposeflour
- 1 teaspoon baking soda
- Pinch fine salt
- 1 bottle stout beer (recommended: Guinness)
- 1 stick butter, melted
- 1 tablespoon vanilla extract
- 3 large eggs
- 3/4 cup sour cream
- 1 (8-ounce) package cream cheese, softened at room temperature
- 3/4 to 1 cup heavy cream
- 1 (1-pound) box confectioners' sugar
Broccoli with Crunchy Topping

- 3 large bunches broccoli (about 10 stalks)

- 3 tablespoons olive oil
- 1 teaspoon chopped fresh rosemary leaves
- 1 teaspoon chopped fresh thyme leaves
- 1 teaspoon chopped fresh Italian parsley leaves

- 8 (3-ounces each) chicken cutlets
- 1 1/2 cups Simple Tomato Sauce, recipe follows or purchased marinara sauce
- 1/2 cup shredded mozzarella
- 16 teaspoons grated Parmesan

Yellow Wax Bean and Radish Salad with Cannellinis

In a large saucepan, cover the drained cannellini beans with 2 inches of water
- 2 cups dried cannellini beans (12 ounces), soaked overnight and drained
- 1 small yellow onion, peeled and halved
- 1 small carrot
- 1 small celery rib
- 1 pound yellow wax beans
- 1/2 cup extra-virgin olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon freshly squeezed lemon juice
- Salt and freshly ground black pepper
- 8 large radishes, sliced 1/4 inch thick
- 1 small red onion, thinly sliced
- 1/3 cup small basil leaves or chopped basil
Zesty Pimento Cheese Spread

Combine all ingredients, except the pimentos, in a bowl
- 1 1/2 pounds grated sharp Cheddar cheese
- 1/2 cup horseradish sauce
- 1/2 cup mayonnaise
- 1 tablespoon mustard
- 1 7-ounce jar chopped pimentos, drained
Citrus Rice Salad

- 1/2 cup sliced almonds
- 4 cups low-sodium chicken stock
- 1/2 teaspoon kosher salt
- 2 tablespoons extra-virgin olive oil
- 2 cups brown basmati rice, rinsed
- 3/4 cup chopped fresh flat-leaf parsley
- 1 medium orange, zested
- 1 lemon, zested
- 1 cup thinly sliced green onions
- Vinaigrette:
- 1/2 cup extra-virgin olive oil
- 1/4 cup fresh orange juice
- 3 tablespoons fresh lemon juice (about 1 lemon)
