BBQ Sauce

In a medium saucepan, heat oil over medium heat
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 4 garlic cloves, minced
- 1 tablespoon mustard powder
- 1 teaspoon red-pepper flakes
- 3 tablespoons light-brown sugar
- 2 cups ketchup
- 1/3 cup Worcestershire sauce
- 1/3 cup cider vinegar
- 1 tablespoon molasses
- 1/4 teaspoon ground black pepper
White Chili

Directions Heat the oil in large pot or Dutch oven over moderate heat
- Ingredients
- 1 tablespoon olive oil
- 1 medium onion, diced (about 1 1/2 cups)
- 2 stalks celery, diced (about 1/2 cup)
- 3 medium poblano peppers (about 4 ounces each), seeded and white ribs removed, finely diced (about 1 1/2 cups)
- 1 clove garlic, minced
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1/4 teaspoon cayenne pepper, more to taste
- 1 pound ground white meat turkey
- 2 (15.5-ounce) cans white beans such as cannelini, preferably low-sodium, drained and rinsed
- 4 cups low-sodium chicken broth
- 3/4 teaspoon dried oregano
- 1 (15.5-ounce) can hominy, drained and rinsed
- Salt
- 1/4 cup nonfat plain Greek-style yogurt
- 2 tablespoons chopped fresh cilantro leaves
- Lime wedges
Sweet Corn Soup

saute onion and potato until soft, add 1 cup stock, cook about 10 min
- 4 cups corn
- 1 tablespoon butter
- 1 small onion
- 1/2 cup grated waxy potato
- 7 cups quik stock stock
- salt

- chopped parsley
Quick Stock

saute vegs caramelize add aromatice and 8 cups water, 2 teaspoons salt

- 1 carrot cors chopped
- 1 celery rib cor chopped

Chicken Persian Style w/Walnuts, Onionand Pomegranite Sauce

Brown chicken in butter, 15 min
- 1 pomegranite, seeded
- 2.5-3 lb chicken, 8 pieces
- salt/pepper
- 4 T butter
- 2 onion, sliced thin
- 1 teas cinnamon
- 2 cups toasted walnuts ground fine
- 1/2 c tomato sauce
- 1 1/2 c chicken stock
- 4 teas lemon juice
- 1 T molasses
Grilled Stripe Bass w/Cauliflower Stew

For the stew: Coat a large saucepan with olive oil
- Extra-virgin olive oil
- 1 large onion, finely diced
- Kosher salt
- Pinch crushed red pepper flakes
- 4 cloves garlic, minced
- 1 (28-ounce) can Italian plum tomatoes, passed through a food mill
- Water
- 1 large head cauliflower, coarsely chopped
- 1 lemon, zested
- 1/4 cup slivered Gaeta or kalamata olives
- 1/4 cup sliced caperberries, cut into thin rounds
- 4 (6-ounce) wild striped bass fillets with skin
- 1 bunch Italian parsley, leaves picked
- 1 lemon, juiced
Boston Baked Beans

- 1 1/2 pounds boneless, skinless chicken breast
- 1 tablespoon extra-virgin olive oil
- 2 cups diced leek, white and light green parts only (about 1 large; see Tip)
- 1/2 teaspoon salt
- 5 tablespoons all-purpose flour
- 1 14-ounce can reduced-sodium chicken broth
- 1 cup low-fat milk
- 2 tablespoons dry sherry (see Tip)
- 1/2 teaspoon dried thyme

1.Salt the chicken, brown in butter and put in a roasting pan
- 1 frying chicken cut in pieces
- 2 teaspoons of sugar
- 1/4 cup of butter
- 1/8 teaspoon of red pepper flakes
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 3/4 tablespoon of dry mustard
- 1 teaspoon of chili powder
- 2 tablespoons of vinegar
- 1/2 teaspoon of Tabasco sauce
- 1 teaspoon of Worcestershire sauce
- 1 cup of water
- 1 tablespoon of chopped onion
- 1 clove of garlic, minced
Asian Veggie Rolls

1. To prepare rolls, add hot water to a large, shallow dish to a depth of 1 inch
- Sauce:
- 8 (8-inch) round sheets rice paper
- 2 cups thinly sliced Bibb lettuce leaves (about 4 large)
