Zucchini Lasagna

Using a mandoline (or a knife if you must), slice the zucchini lengthwise into long sheets
- filling:
- 1 giant zucchini (ours was about 2 pounds)
- kosher salt
- 1 pound ricotta cheese
- 1 whole egg and 2 egg yolks
- 1 cup parmesan cheese
- 1 tsp salt
- 2 Tbsp chopped parsley
- 1 tsp chopped fresh oregano
- 1 tsp chopped rosemary (optional)
- freshly ground black pepper
- pinch fresh ground nutmeg (about 3 grates)
- the rest:
- 2 about 2 cups Marinara sauce
- 1 cup grated carrot
- small handful chopped basil
- 1 large ear of corn, kernels cut from cob
- ½ to 1 lb fresh mozzarella
Skirt Steak Tacos with Roasted Tomato Salsa

Heat grill to high. Wrap tortillas in aluminum foil and on the top rack of the grill while the steak is grilling
- 8 (6-inch) flour tortillas
- 1 1/2 pounds skirt steak
- 2 tablespoons canola oil
- Salt and freshly ground black pepper
- 1/2 head romaine lettuce, thinly shredded
- 1 medium red onion, thinly sliced
- 1 ripe avocado, peeled, pitted, halved and diced

- 8 ounces sour cream
Wild Mushroom Soup

Melt 6 tablespoons butter in large pot over medium-high heat
- 8 tablespoons (1 stick) butter, room temperature
- 2 cups sliced celery
- 1 cup sliced shallots
- 3/4 cup chopped onion
- 3 garlic cloves, minced
- 3 cups sliced stemmed fresh shiitake mushrooms (about 6 ounces)
- 3 cups sliced crimini mushrooms (about 6 ounces)
- 3 cups sliced oyster mushrooms (about 4 1/2 ounces)
- 1/2 cup dry white wine
- 1/2 cup dry Sherry
- 1/4 cup all purpose flour
- 8 cups chicken stock or canned low-salt chicken broth
- 1/2 cup whipping cream
Lemon Poppyseed Muffins

Preheat oven to 400 degrees F (205 degrees C) and place rack in center of oven
- 2 cups (260 grams) all-purpose flour
- 1 tablespoon poppy seeds
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup (113 grams) unsalted butter
- 1 cup (200 grams) granulated white sugar
- 2 large eggs
- Zest of one lemon
- 1 cup (240 ml) plain yogurt or sour cream (do not use non fat yogurt or sour cream)
- 1 teaspoon pure vanilla extract
- Lemon Glaze: (optional)
- 1/2 cup (60 grams) confectioners sugar (powdered or icing sugar)
- 2 tablespoons fresh lemon juice
Crostata with Dried Apricots

For the crust: Add the flour, salt, and sugar to a food processor and pulse to combine
- Crust:
- 1 1/2 cups all-purpose flour
- 1/2 teaspoon fine sea salt
- 1 tablespoon sugar
- 3 tablespoons cold, unsalted butter, cut into small pieces
- 1/2 cup cold mascarpone cheese
- 1 1/2 tablespoons fresh lemon juice
- 3 tablespoons ice water
- Filling:
- 2 cups (12 ounces) dried apricots
- 1/3 cup chopped walnuts
- 2 teaspoons lemon zest
- 1 teaspoon ground cinnamon

Spicy Cabbage and Chicken Salad

Puree garlic, shallot salt and chili
- 1/2 clove garlic peeled
- 1 small shallot bulb peeled
- 1/4 teaspoon salt
- 1 -2 serrano chilis coarsely chopped
- 1 teasoon sugar
- 1/4 cup rice wine vinegar
- 2 tablespoons fish sauce
- 1 tablespoon soy sauce
- juice 1 lime
- 1/8 cup cilantro
- 1 tablespoons vegetable oil
- 1-10 oz chicken, cooked and shredded
- 1 large carrot julienned
- 1 red onion sliced thin, rinse briefly in hot and then cold water
- 12 oz cabbagein 1/2 in slices
- 1-2 scallions finely sliced
Vietnamese Sweet and Sour Soup

saute shallots and lemon grass for a minute add tomatoes then mushrooms and sugar
- 1 teaspoon corn oil
- 2 tablespoons minced shallots
- 2 stalks lemon grass bulbs smashed
- 1 large tomato, seeded and cored, fine dice
- 1/2 lb mushrooms sliced thin
- 1 1/2 teaspoons sugar
- 6 cups water
- 1/2 lb shrimp
- 6 tablespoons fish sauce
- 3 tablespoons fresh lime juice
- 1/4 lb thin rie vermicelli
- 1/2 cups beans sprouts
- 1/2 teaspoon crushed red pepper
- 2 tablespoons sliced scallion
Dover Sole with Coconut Curry Sauce, Shiitakes and Green Beans

In a saucepan head 1 teaspoon oil over meduim heat
- 1 Teaspoon and 1 tablespoon of vegetable oil divided
- 1/4 cup finely chopped onion
- 1 tablespoon fresh ginger minced
- 2 tablespoons curry
- 1/2 teaspoon red pepper
- 1 cup chicken stock
- 1 (14 oz) can coconut milk
- 2 tablespoons flour
- 2 tablespoons corn starch
- 1 tablespoon sesame seeds
- salt and pepper
- 1 lb dover sole or flounder filets
- 1 cup sliced shiitakes
- 1 lb green beans
- 4 cups cooked jasmine rice
- 1/4 cup sliced scallions
- 1 tablespoon fresh basil for garnish

- Salad:
- 2 cups coarsely chopped skinless, boneless rotisserie chicken
- 1 cup chopped tomato
- 1/2 cup thinly sliced red onion
- 1/3 cup sliced fresh basil
- 2 (16-ounce) cans cannellini beans or other white beans, rinsed and drained
- Dressing:
- 1/4 cup red wine vinegar
- 2 tablespoons extravirgin olive oil
- 1 tablespoon fresh lemon juice
- 2 teaspoons Dijon mustard
- 1/2 teaspoon salt
