- 1/3 cup instant vanilla pudding mix
- 1 1/4 teaspoons unflavored gelatin
- 1 cup fresh lime juice from 6 to 8

- 1 Can Goya Roja beans or small red

- 1 Bag Tortilla chips - crushed

Pecan Toffee Squares

- 1/2 cup butter softened

- (1) 14 oz can sweetened condensed milk
- 1 tsp. vanilla

Sesame Spinach Salad

- Salad:
- 1 bag of baby spinach (rinsed)
- 1 small box of fresh strawberries
- (rinsed and cut)
- 1 cup purple grapes (rinsed and sliced
- in half)
- 1/3 cup Pine Nuts
- Dressing:
- 1/2 cup Red wine vinegar
- 1/2 cup vegetable oil
- 1 cup sugar
- 1 Tbs. Sesame Seeds
Honeyed Carrots

1. In heavy skillet bring water to boiling; add carrots
- 6 cups water
- 3 lbs. baby carrots with tops trimmed to 2 inches, peeled or scrubbed
- 2 Tbsp. butter
- 3 to 4 3 to 4 Tbsp. honey
- 1 tsp. finely shredded lemon peel
- 1/2 tsp. crushed red pepper
Chocolate Pot De Creme

Heat milk in a small pan over moderate heat until it comes to a boil
- 4 demitasse cups
- 2/3 cup whole milk
- 1 egg
- 2 tablespoons sugar
- A pinch of salt
- 1 cup semisweet chocolate chips
- 2 tablespoons Frangelico (hazelnut liqueur) or dark rum
- 1 cup whipping cream
- 2 tablespoons sugar
- Edible flowers (found in produce department) or candied violets, for garnish (optional)
Crispy Mashed Potatoe Cakes

Peel and dice potatoes and add to a large pot
- 2 large Idaho potatoes, 2 pounds total weight
- 3-4 ounces cream cheese
- 2 tablespoons sour cream
- 2 scallions, very finely chopped
- 2 teaspoons lemon zest
- 1 egg, lightly beaten
- Salt and freshly ground black pepper
- 1 tablespoon extra virgin olive oil (EVOO)
- 1 tablespoon butter
