Preheat oven to 450 degrees F (230 degrees C)
- 1 teaspoon olive oil
- 1 cup diced zucchini
- 1/2 cup minced onion
- 1 clove garlic, peeled and minced
- 2 cups diced fresh tomatoes
- 2 tablespoons chopped fresh basil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 (6 ounce) halibut steaks
- 1/3 cup crumbled feta cheese
Rice Salad with Chicken, Orange and Nuts

1. Pare one of the oranges thinly, removing only the rind, not the white pith
- cup vinaigrette:
- 3 large oranges
- 1 lb cooked chicken, diced
- 3 Tbsp chopped fresh chives
- 3/4 c almond or cashew, toasted
- Mixed salad leaves to serve
- 1 cup long grain rice
- 2 tsp Dijon mustard
- 1/2 tsp fine sugar
- (3 Tbsp wine vinegar and 6 Tbsp olive oil)
Roasted-Vegetable Lasagna

Put oven racks in upper and lower thirds of oven and preheat oven to 425F
- 1 large eggplant (1 1/2 pounds)
- 3 tablespoons extra-virgin olive oil
- 2 medium zucchini, trimmed and cut lengthwise into 1/4-inch-thick slices
- 2 red bell peppers, quartered lengthwise
- 1/2 teaspoon black pepper
- 1 3/4 teaspoons salt
- 2 garlic cloves, minced
- 3 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 3 1/2 cups whole milk
- 3 ounces Italian Fontina, coarsely grated (1 cup)
- 1 ounces finely grated Parmigiano-Reggiano (1/2 cup)
- 3 tablespoons finely chopped fresh basil
- 5 (6 3/4- by 3 1/2-inch) or 10 (7- by 6 3/4-inch) no-boil lasagne noodles
Pasta Bolognese

In a large frying pan, heat the butter and bacon over moderately low heat
- 2 tablespoons butter
- 1/4 pound sliced bacon, cut crosswise into 1/4-inch strips
- 1 onion, chopped
- 1/2 pound ground beef or a mixture of pork, veal, and beef (meat-loaf mix)
- 1 cup canned low-sodium beef or chicken broth or homemade stock
- 1/2 cup dry white wine
- 2 tablespoons tomato paste
- 1/2 teaspoon dried oregano
- 3/4 teaspoon salt
- 1/4 teaspoon fresh-ground black pepper
- 1/2 cup heavy cream
- 3/4 pound spaghetti
- 2 tablespoons chopped fresh parsley

- 1 prepared pie crust sheet
- 2 (1 pound) bags frozen peaches, slightly thawed and coarsely chopped
- 1 pint fresh blueberries
- 2 tablespoons all-purpose flour
- 1/2 cup sugar
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon vanilla extract
- 3 tablespoons unsalted butter, cold and cut into cubes
- 1 egg mixed with 1 tablespoon water, for egg wash
- Sugar cubes, crushed for dusting

- ~1.5 lbs meat (I used a mix of parmesan & parsely sausage + ground beef. italian sausage is a good fit here, too)
- 8 oz mozarella
- Béchamel Sauce
- 2/3 stick of butter
- 2/3 cup of all-purpose flour
- 6 cups of whole milk (warm)
- 4 eggs (room temperature)
- 2/3 cup grated Asiago/Romano/Parmesan
- salt and pepper to taste
- 1/2 tsp grated nutmeg
