Southern Apple Crumble

Heat oven to 300°F. Spray bottom and sides of 8-inch square (2-quart) glass baking dish with cooking spray
- 3 large apples, peeled, coarsely chopped (about 3 cups)
- 1/2 cup granulated sugar
- 1/4 cup packed brown sugar
- 1 to 2 teaspoons ground cinnamon
- 1/4 cup cold butter or margarine, cut into small pieces
- Topping
- 1 pouch (1 lb 1.5 oz) Betty Crocker® oatmeal cookie mix
- 1/2 cup butter or margarine, melted
- 1/2 cup chopped pecans
Graham Cracker and Eagle Brand Pie

Beat yolks, milk, sugar and then add lemon juice
- 2/3 cup graham cracker crumbs(use all but 4 tbsp. for crust)
- 1 cube butter, melted and mixed with crumbs
- 3 egg yolks well beaten
- 3 egg whites, beaten stiff
- 1 can eagle brand milk
- 1/4 cup sugar
- 1/3 cup fresh lemon juice (3 small or 2 large)
Maple-Orange Chicken with Acorn Squash and Sweet Potatoes

- 1 small to medium acorn squash, peeled, seeded, and cut into 2-inch pieces
- 2 sweet potatoes, peeled and cut into 2-inch pieces
- 2 leeks, rinsed and chopped
- 5 (5-ounce) skinless chicken breast halves (with or without bone)
- Salt and ground black pepper
- 1 cup orange marmalade
- 1/2 cup reduced-sodium chicken broth
- 1/2 cup orange juice
- 1 tablespoon hoisin sauce
- 1 tablespoon maple syrup
- 1/4 cup chopped fresh parsley leaves
- 1 to 2 tablespoons finely chopped fresh rosemary leaves
Three Meat Lasagna

In a large skillet, melt the butter over medium high heat
- 1 package no-boil lasagna sheets
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, shredded
- Bechamel
- 4 tablespoons unsalted butter
- 4 tablespoons flour
- 2 2/3 cups milk
- Salt and freshly ground pepper to taste
- Freshly grated nutmeg to taste
- Ragu
- 3 tbsp olive oil
- 4 oz pancetta, finely chopped
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 small carrot, chopped
- 4 ounces ground veal
- 4 ounces ground pork
- 8 ounces ground beef
- 2/3 cup red wine
- 1 1/2 cups chicken stock
- 2 cups milk
- 32 oz canned plum tomatoes, roughly crushed

- 2 pounds (about 20) baby red potatoes
- 4 slices center-cut bacon
- 12 ounces ground turkey (93 percent lean)
- 1/2 cup salsa
- 1 teaspoon chili powder

Harvest Sweet Potato Soup

I always double this recipe whenever I prepare it, since we love leftovers
- 1 cup chopped celery
- 1/2 cup chopped onion
- 1 tablespoon canola oil
- 3 medium sweet potatoes (about 1 pound), peeled and cubed
- 3 cups chicken or vegetable broth
- 1 bay leaf
- 1/2 teaspoon dried basil
- 1/4 teaspoon salt, optional
Spinach Lasagna With Mushroom Ragu

Make the ragu: Soak the porcini mushrooms in 1 cup hot water until soft, about 15 minutes
- For the ragu:
- 1 ounce dried porcini mushrooms
- 2 tablespoons extra-virgin olive oil
- 1 medium onion, chopped
- 1 large carrot, finely chopped
- 1 stalk celery, finely chopped
- 4 cloves garlic, chopped
- 2 tablespoons tomato paste
- 2 portobello mushroom caps, chopped
- 1 1/2 pounds shiitake mushrooms, stems removed, chopped
- Kosher salt and freshly ground pepper
- 2 28-ounce cans whole San Marzano tomatoes, crushed by hand
- 3 bay leaves
- 1/4 cup chopped fresh parsley
- For the lasagna:
- 3 ounces parmesan cheese, grated
- 1 1/2 pounds part-skim mozzarella cheese, shredded
- 8 ounces asiago cheese, shredded

In a large bowl, whisk soy sauce, honey, oil and vinegar until blended
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup honey
- 3 tablespoons canola oil
- 2 tablespoons rice vinegar
- 1/2 cup barbecue sauce
- 1 pound boneless skinless chicken breasts, cut into strips
- 1/4 teaspoon pepper
- 1/4 cup honey mustard salad dressing
- 1 package (14 ounces) coleslaw mix
- 3 green onions, chopped
- 4 tablespoons sliced almonds, toasted, divided
- 3 teaspoons sesame seeds, toasted, divided

- 1 cup grated sharp cheddar cheese, room temp
- 1/2 cup butter, room temp
- 1 cup flour
