Real Meatballs and Spaghetti

- 1/2 pound ground veal
- 1/2 pound ground pork
- 1 pound ground beef
- 1 cup fresh white bread crumbs (4 slices, crusts removed)
- 1/4 cup seasoned dry bread crumbs
- 2 tablespoons chopped fresh flat-leaf parsley
- 1/2 cup freshly grated Parmesan cheese
- 2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon ground nutmeg
- 1 extra-large egg, beaten
- Vegetable oil
- Olive oil
- 1 tablespoon good olive oil
- 1 cup chopped yellow onion (1 onion)
- 1 1/2 teaspoons minced garlic
- 1/2 cup good red wine, such as Chianti
- 1 (28-ounce) can crushed tomatoes, or plum tomatoes in puree, chopped
- 1 tablespoon chopped fresh flat-leaf parsley
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 pounds spaghetti, cooked according to package directions
- Freshly grated Parmesan
Mozzarella Cheese Filled Heart with Roasted Red Pepper Pesto

Unroll pie crust onto a large cutting board
- Cheese Filled Hearts:
- flour for dusting cutting board
- 1 refrigerated pie crust (1/2 of a 15 oz. box ), thawed
- 1/4 inch thick slices of mozzarella cheese
- 1 egg white
- optional, 1-2 tablespoons freshly grated Parmesan cheese
- Roasted Red Pepper Pesto:
- 12 ounce jar of roasted red peppers, drained and patted dry
- 1 teaspoon minced roasted garlic
- 2 ounces chopped roasted and salted almonds
- 1 tablespoon chopped flat leaf Italian parsley
- 1/2 teaspoon fresh squeezed lemon juice
- 3 tablespoons freshly grated Parmesan cheese
- 2 tablespoons Extra Virgin Olive Oil
- salt and pepper, to taste
Heirloom Tomato and Mozzarella Tart

- 1 package frozen puff pastry dough, defrosted and rolled out, then cut in 2.
- heirloom tomatoes, minis from coscto work great
- marinated mozzarella, found in a tub at costco
- 1 cup balsamic vinegar
Arrachera (Skirt Steak Taco Filling)

Sprinkle each piece of skirt steak with the sazon and white pepper
- 2 pounds skirt steak, pounded flat
- 10 (.18 ounce) packets sazon seasoning with coriander and achiote, such as Goya®
- 1 tablespoon white pepper
- 1/2 (12 fluid ounce) bottle Mexican beer (such as Corona®)
Jeweled Rice with Dried Fruit

Rinse rice in several changes of cold water in a large bowl until water runs clear
- 3 cups basmati rice (1 1/4 lb)
- 4 qt water
- 3 tablespoons salt
- 1/2 cup dried apricots (3 1/2 oz), quartered
- 1/2 cup golden raisins (3 oz)
- 1/2 cup dried cranberries (2 oz)
- 1 stick (1/2 cup) unsalted butter
- 1/2 teaspoon ground cardamom
- 1/2 teaspoon black pepper
- 1/2 cup coarsely chopped shelled unsalted pistachios (not dyed red; 2 1/2 oz)
Chicken Oregano

This can be served hot from the oven, but makes good picnic fare and is delicious at room temperature
- 2 eggs, lightly beaten
- 1/4 cup milk
- 1 cup unseasoned fine bread crumbs, preferably made from French or Italian bread
- 3/4 cup freshly grated Parmesan cheese
- 1 1/2 tablespoons dried oregano, finely crumbled
- salt and freshly ground pepper, to taste
- 10 chicken breast halves, thighs, or legs, or a combination
STIR FRIED WILD RICE WITH APPLES AND SUN-DRIED CHERRIES

- 2 tablespoons olive oil
- 2 tablespoons finely minced onions
- 1 tablespoon curry powder
- 1 apple, peeled, cored, and cut into small cubes
- 1 cup chopped mushrooms
- 1/4 cup sun dried cherries
- 1 1/2 cups cooked wild rice
- Salt and freshly ground black pepper, to taste
Slow Cooker Chicken Noodle Soup

Place chicken, water, onion, carrots and salt and pepper to taste into a slow cooker
- 4 skinless, boneless chicken breast halves
- 6 cups water or chicken broth
- 1 onion, chopped
- 2-3 carrots, sliced into coins
- 2 stalks celery, chopped (optional)
- salt and pepper to taste
- 1 (12 ounce) package frozen egg noodles
Classic Italian Ragu: Age-old, Tried & True

In a pot add a couple glugs of olive oil & sauté clove of garlic until brown then discard
- 1 small carrot, finely diced
- 1 med onion, finely diced
- 1 rib of celery, finely diced
- 1 clove of garlic
- quarter pound of sausage meat
- half pound ground veal
- 1.5 pounds peeled, seeded, pureed fresh tomatoes or 1 large can of peeled tomatoes
- olive oil
- salt & pepper
Salted Butter and Chocolate Chunk Shortbread Cookies

I've always found chocolate chip cookies to be flawed
- 1 cup plus 2 tablespoons (2 1/4 sticks) salted butter, cut into 1/2-inch pieces
- 1/2 cup granulated sugar
- 1/4 cup light brown sugar
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 6 ounces semisweet or bittersweet dark chocolate, roughly chopped
- 1 large egg, beaten Demerara sugar, for rolling
- Flaky sea salt, such as Jacobsen, for sprinkling
